Latest ‘Shot on iPhone 13 Pro’ video highlights Singapore’s chicken rice war

Apple’s latest “Shot on iPhone” video “Poached” celebrates Singapore’s beloved chicken rice dish, with Chef’s Table creator David Gelb producing the piece on an iPhone 13 Pro.

Released on Sunday on the official Apple YouTube channel, “Shot on iPhone 13 Pro – Poached” examines food served in hawker centers, food halls in Singapore, with an emphasis on chicken rice. Referred to by chef and restaurateur Bjorn Shen as the “equivalent of pizza for New Yorkers,” chicken rice is a staple and forms the basis of the video’s story.

Created by David Gelb, creator of “Chef’s Table” and director of “Jiro Dreams of Sushi,” the mini-documentary discusses the Tian Tian company’s “chicken-rice war” at the Maxwell Food Center. After founder MDM Foo’s daughter, Ms. Loi, took over, a disagreement over the working method led to the departure of head chef Mr. Wong.

Wong opened another similar-looking business a few stalls away, serving what he believed to be the way Tian Tian’s chicken rice was cooked before handing over control. Now the two companies offer the same dish, but with minor differences, each serving their own audience.

A making-of video released the same day showed Gelb filming the documentary on the iPhone 13 Pro. This included mounting the iPhone to professional sliders and tripods, using various mounts and turntables, and other equipment.

With space at a premium in Hawker’s small kitchens, the iPhone was seen as a way to capture video in cramped conditions. Along with the macro mode and the variety of tools on offer, Gelb distinguishes the focus-changing options from the cinematic mode as an essential post-production tool.

The ability to mount the iPhone in places where it is difficult to position larger systems was also widely used by the team. At one point, the iPhone is held in a rigging attached to a large knife, which is used to prepare food on the stalls. The Apple Watch was also used as a monitor when drawing up the unusual iPhone placements.

“Poached” is a sequel to the February movie “Life is But a Dream,” which Apple commissioned from Park Chan-wook, an internationally renowned director known for films like “The Handmaiden” and “Oldboy.”
